Once the cut has been cured and smoked, it is rolled in a hand-picked, thin layer of fat to keep in the moisture. As the Lachsschinken ages, the pork develops a flavor similar to smoked salmon. Chill this unique meat and slice it thin, like lox for bagels, and serve with cream cheese, onions and capers.
